Creamy Fish Florentine

Fish Florentine is a classic dish that elegantly combines the delicate flavors of fish with a rich, creamy sauce and nutritious spinach. This recipe is perfect for a cozy family dinner or an impressive dish to serve guests.

Ingredients

  • 4 fish fillets (such as sole or cod; choose fresh or thawed)
  • 2 cups fresh spinach (baby spinach works well for a more tender texture)
  • 1 cup heavy cream (you can substitute with half-and-half for a lighter version)
  • 1 cup grated Parmesan cheese (for a more robust flavor, consider using aged Parmesan)
  • 3 tablespoons butter (unsalted for better control over seasoning)
  • 2 cloves garlic, minced (fresh garlic will elevate the dish's flavor)
  • Salt and pepper to taste (use freshly ground pepper for added depth)
  • 1/4 teaspoon nutmeg (freshly grated nutmeg can enhance the flavor)
  • Fresh lemon wedges (for serving; adds brightness to the dish)

Instructions

  1. Preheat your oven to 350°F (175°C). This step ensures that the fish cooks evenly and develops a beautiful crust.
  2. Sauté the spinach: In a large skillet, melt 1 tablespoon of butter over medium heat. Once the butter has melted and is bubbling slightly, add the minced garlic. Sauté for about 1 minute, stirring frequently to prevent burning, until the garlic is aromatic. Next, add the fresh spinach to the skillet. Cook it until wilted, which should take about 2-3 minutes. Make sure to stir often. Season your spinach with a pinch of salt, pepper, and nutmeg. For an extra layer of flavor, you may also consider adding a dash of red pepper flakes. Remove the skillet from heat and set the sautéed spinach aside.
  3. Prepare the fish: In a baking dish (around 9x13 inches works well), arrange the fish fillets in a single layer. Depending on your preference, you can lightly score the top of the fish fillets or leave them whole. Season both sides generously with salt and freshly cracked black pepper. Spread the sautéed spinach evenly over the fish fillets to create a lush, colorful layer.
  4. Make the sauce: In a medium saucepan, melt the remaining 2 tablespoons of butter over medium heat. Once melted, slowly pour in the heavy cream, stirring constantly. Bring the cream to a gentle simmer, being careful not to boil it. Add half of the grated Parmesan cheese, stirring until it's fully incorporated and the sauce is smooth and creamy. This will become a luscious base for your dish. Pour this creamy mixture over the spinach and fish in the baking dish, making sure everything is well coated.
  5. Top with remaining cheese: Finally, sprinkle the remaining grated Parmesan cheese evenly over the top of the fish and sauce. This will create a lovely golden layer as it bakes.
  6. Bake: Cover the baking dish with aluminum foil to prevent the fish from drying out during cooking. Place it in the preheated oven and bake for 20 minutes. After this initial bake, remove the foil to allow the top to brown and become slightly crispier. Bake for an additional 10-15 minutes, or until the fish is cooked through and flakes easily with a fork. The internal temperature of the fish should reach 145°F (63°C).
  7. Serve: Once out of the oven, let the dish cool for a couple of minutes before serving. Serve hot, garnished with fresh lemon wedges for an added burst of flavor. The acidic zest of the lemon complements the creaminess of the sauce beautifully.

Fish Florentine is not only delicious but also visually stunning. Serve this dish alongside fluffy rice, mashed potatoes, or a fresh side salad for a complete meal. Enjoy your delightful culinary creation!
